A primary reason that I have so many cooked chicken recipes is that my family is small. We only have 4 members including myself, two of them are kids. It is quite possible that we cannot finish a whole chicken, no matter how delicious it is. So I always have to find ways to use the leftover chicken in the next meal. There are a variety of recipes that cooked chicken could be used. The most common type of food that I cook is salad. You can simply cut the leftover chicken into small pieces, mix with vegetables, some breadcumbs and salad dressing to make a quick dish. The whole thing should take no more than 10 minutes to complete. The best of all, you can use chicken just taken out from the fridge and no re-heating is needed.
Another frequently made dish is chicken curry. You can buy cooked chicken from the supermarket. They are usually chopped into small pieces already. Put some garlic and sliced onion in a frying pan and heat with butter, put the chicken in, fry until the skin turns golden brown. Then pour water into the pan, add curry paste and let the pot cook for 2 hours in medium heat. This is my family’s favorite dish. Preparation time is about 10 minutes only. Quick and yummy.
